Flu Shots

No, I'm not going to extol the benefits of the flu vaccine.  I am going to give you my family's recipe for a Cold and Flu remedy. I'm sure you've tried many and you are probably sceptic, but you have to try this one. Believe me with this cold weather I tend to suffer from sinus congestion and tightness in my chest and this works. It clears your head, soothes your throat and so much more.

Flu Shots

Ingredients:

Juice of 1 lemon
2 cloves of Garlic
1 inch piece of Ginger
2 Green Chillies
1 tablespoon of Honey
1/2 teaspoon Nigella seeds (also known as Black seed or Kalonji)

Method :

Take all the ingredients and blend till smooth. This makes it easier to swallow. When my blender is on the fritz I just chop it all finely, this works just as well. Take about a heap tablespoon 3 to 4 times a day.

Orange Cupcakes

Orange Cupcakes

This week, thanks to a school cake sale, I've decided on making cupcakes. The trick when using fresh oranges or lemons in cakes is to use the zest as well as the juice of the fruit. If your recipe requires 1 cup of liquid and your orange gives you half a cup then add milk or yoghurt to make up the rest of the liquid.  

Orange Cupcakes (12 cupcakes)

Ingredients: 

1 1/2 cups Flour
10ml Baking Powder
2ml Salt
3/4 cup Sugar
1/2 cup Oil
1/2 cup Yoghurt (if you have half a cup of orange juice then don't add yoghurt, only use 1/2 a cup of liquid in total)
The juice and zest of half an orange.  

Method: 

Sift the dry ingredients together. Mix all the wet ingredients and pour into the dry ingredients and mix. Spoon the batter into casings until about 3/4 of the way full. Put into a preheated oven at 180º for 15 to 20 minutes.  

This recipe can be made with any fruit juice. Lemon juice and zest is one of my favourites. Add 3 tablespoons of coconut to the lemon cupcakes batter for an interesting alternative.  

This recipe is very child friendly. Encourage your kids to to use their favourite juice or yoghurt.  

For the cake sale I decorated the cupcakes with butter icing with a bit on orange juice and zest.
